A brief history of mole: The Spanish word Mole, pronounced (MOH-lay) comes from the Nahuatl molli, meaning concoction, or mixture. There are several legends about mole poblano's origin that characterize the sauce as a culinary symbol of Mexico's mestizaje: the racial mixing of the indigenous people and the Europeans. The most famous moles come from the Mexican state of Puebla and the Oaxaca region: also known as the Land of Seven Moles. |
